Chilled couscous salad with tomato, asian veggie pattie, bell pepper, onion, mushrooms and light soy sauce
Seasoned mango, turkey meatballs, mushrooms, bell peppers, onions, mixed field greens and Newman's Own light cranberry walnut dressing
Honey mustard tilapia, blackberries, sugar snap peas, onion, mixed field greens, dark chili powder and balsamic vinegar
*I've got a confession about salad #3. I didn't love the combo! I don't think the sugar peas paired well with the blackberries. I will try it again without the peas and see how it goes?
An attainable goal for my dinner salads is 2-3 days a week. I will post my creations each time! This helps when I want to go back and recreate a particular salad flavor. Watcha think??

If you are eating salads for dinner, what are you eating for lunch?
ReplyDelete@ Serenity, lunch is typically my largest meal of the day. Most often it's a frozen meal with a side salad or veggies. I also make wraps for lunch and I eat soup. At some point I'll start freezing my own meals for lunch if time permits.

ReplyDeleteI've tried the salad for lunch/dinner, I usually make it day one only! My salad never taste as good as the store bought one Pre-made! That's never fair! Three days ain't bad!

ReplyDelete@ Mrs. Pancakes, if you start making your own salad a couple times a week with different ingredients the store bought salads won't measure up, trust me!
ReplyDelete@ thirteenlbs, no I didn't grill the mango..still waiting for my George Forman grill to arrive...sigh! But you could for sure! I just seasoned it with Tajin and lemon juice!
