Weigh Day 10/1/12




190.6

I set a loss goal of 2.6 for last week, I didn't hit it, I actually gained .4 ounces. I only worked out one day last week because "New New" aka my new boo insisted that I rest since I kept coughing up all sorts of nastiness! Although I wanted to resist his request, I knew he was right.

I knew for sure I wouldn't hit the 2.6 loss without workouts once my cycle started...ugh! I feel bloated of course! All I can aim to do is conquer this week successfully since I have a goal to reach!

I okay last week, I did end up having three cheat meals instead of one. I also ate three treats instead of one on different days of course thanks to PMS cravings. That ish is real!! The cravings, the cramping...it truly sucks ass.

This week meal planning/prep was pretty easy, I had a lot of leftovers in the freezer from the past two weeks for dinners this week.

On the menu this week:
*Lean turkey meat loaf
*Whole wheat spaghetti w/ meat sauce
*Slow cooked turkey chili
*Baked potatoes with broccoli & grated cheeses
*White bean & chicken soup
*Skinny Enchiladas

Return of the weekly update!!

Where I'm at..

Waist: 33

It's been a minute since I faithfully posted weekly about my journey. I'm proud to say that I'm B-A-C-K!!! Like for real back! Last week was awesome! I set a weight loss goal for the week, a food goal and workout goal!

My weight loss goal for last week was 6 pounds, I lost 4.4 pounds. I'm okay with that :)) This week my goal is a 2.6 loss.

I'm proud to say that I stuck to my menu the food I prepared last Sunday for lunches, dinners and snacks Mon-Friday! I also consumed no less than 64 oz of water per day! I tracked what I ate, this was fairly easy since my meals were prepped.

I completed five of my six workouts. Main reason why I didn't do them all?? I got sick (insert sad face here)! I started to not feel so great late Wednesday night and by Friday I was a total mess. Started to feel better Saturday but rested on Sunday instead of completing my missed day. I'm still congested this morning...I'll workout this evening once I make it home.

One cheat meal which was Thursday, a Thai dinner with a certain someone that brought me these...


Accompanied by a Twix bar which was my one treat allowed for the week! I ate it on Friday as I was too full to eat it after dinner...piggy!

I am allowing myself one cheat meal per week...not day AND one treat per week my choice.

I find this helps me to stay on track. I'm going to be brutally honest about the 30 pounds I've gained since this time last year. It's not pretty but it's honest and it's real, something I've always been. I'm addressing it and I've already lost 5 of it!

I'm working to get back to my goal weight of 165 by my 2 year maintaining date which is January 15, 2013. I'll take progress pics on October 1, then continually the 1st of each month. My weekly weigh day is Monday, I'll report in each week.

This is a long post but here is some of my food prepped for this week!

I'm up!!

It's late Tuesday night and I'm up thinking. Evening workouts bite...I'm revved up like a mofo! You'd think I'd be tired since I did HIIT in the 5' o'clock hour this morning...not so much!

I recorded a vlog over the weekend which I need to upload. I did it on my iPad so it takes a little longer to render, my patience is a constant work in progress (sigh). It's a mini haul, my getting back to happy update!

I decided last week that I really needed to get my ass in gear and hop back on my healthy lifestyle journey. So what did I do?? I cooked and prepped my food for the week Sunday afternoon! It took me about 3 1/2 hours to complete all the cooking. Majority of my shopping was done Saturday...take a look!

It was a labor of love but totally worth the effort!! I have a goal to drop 6 pounds this week, I'll share my results next Monday when I weigh in again. I'm not counting any calories just eating my prepared meals.

Yes I know...

Yes I said I had stuff on my mind that I wanted to blog about last week but I just didn't feel like doing it *shrugs*

I did check my weight this morning and I am at 178.6. That's down almost 2 pounds from last week. I was in New Orleans over the weekend with my sweetheart and we ate out a few times.

This was Saturday night date night food! I've never been to this spot, some of THE BEST food I've ever had! We had a very nice time together, it's always good when it's just us..minus all of the running around with the kids.

Ironically when we were eating dinner we both received text messages at the same time about Whitney Houston passing away. I was a HUGE Whitney Houston fan growing up, probably like most girls my age. I had my hopes high for a comeback success so hearing this really saddened me.

I will say that I truly believe in my heart that our paths are predestined. Choices and decisions along the way will aide in our failures and successes. I believe in God and I believe that God makes no mistakes, whether or not we agree is personal.

I pray that Whitney Houston has some peace and comfort now.

For those of you that commented on my last blog post, I appreciate it! I wasn't sad or upset about the weight gain, my body really looks good from the strength training! As a matter of fact, my boyfriend told me when he saw me, "You done got finer than a MF!" So we're straight and I'm not trippin :-)

The non-humping hump day!

No humping for me today...smh. Anyway, here are my workout logs from yesterday and today!








So I seriously had a "dingbat" moment! I just realized this morning that I calculated my leg press weight wrong last week! Instead of multiplying the amount of weight I stacked on each side by two...I just listed the single weight! Duh!! So this morning I actually pressed #140 on my reps!

My body is still sore but not as much as it was last week. Next week the routine changes...please start praying for me now!

In other news, I've upgraded my peanut butter! No more natural not really natural at all Jif. I'm sad but I knew it was time. Here's what I'm eating now!










It resembles baby poo BUT if you can get past that it tastes pretty good!

Miesha's Black Bean Veggie Burgers

Please keep in mind that this is my own personal recipe. Be courteous and link back to me if you decide to share it :-)

Ingredients: 

1 (16 oz) can black beans rinsed
2 cu cooked brown rice
1/2 cu (unseasoned) bread crumbs
1/2 cu chunky salsa
2 large eggs beaten
1/2 cu zucchini chopped
1/2 cu mushrooms chopped
4 scallions (green onion) chopped
4 garlic cloves minced
4 Tbsp extra virgin olive oil
1 tsp sea salt (optional)
1/2 tsp black pepper
1/2 tsp cumin
1/2 tsp chili powder

Rinse black beans then mash them in a bowl with a fork

Add cooked brown rice, bread crumbs, salsa, eggs, zucchini, mushrooms, scallion, garlic, salt, pepper, cumin, and chili powder to bowl and mix (mash) well. 


Add half of extra virgin olive oil to skillet. Bring to medium heat. Form patties to place in skillet. Do not add patties until the skillet with oil is fully heated.


Allow patties to brown completely on each side, approximately 8-10 minutes. Be mindful when flipping the patties that they are still somewhat fragile. 


You can serve these as desired, I like mine with lettuce, tomato, mustard and ketchup .My girls like shredded melted cheese on top! Enjoy!

Healthy Lifestyle Meet Up- Help Through The Holiday's!

I'm a lil tardy for the party, as the other ladies have already posted about our first meet up last weekend! Please cut me some slack..thanks!

The weather was absolutely perfect for the walk! It was nice meeting the ladies that I hadn't already met. After the walk at Hermann Park we ate lunch at Hungry's Cafe.



I had had this! Tex-Mex omelette, black beans and new potatoes...Delish!

I'd never been to Hungry's before, the food was pretty good! I didn't walk out feeling overly stuffed which is a great thing being that we were meeting to work on our healthy lifestyle!

So our next event is in the works...SKATING!!! Woot Woot! I haven't been on skates in years BUT I'm up for the challenge! For those of you that didn't come to the walk, come kick it with us at the rink! Tentative date is Saturday, December 3rd. Details soon to follow!

Food..Fun..and Faith!

This past weekend was chill and I had a few "highlights" to top it off. First I have to say that meeting two bloggers I follow for the first time face-to-face was a treat!

Friday night Trina @ Ah..Me So Hongry and I met at Mimi's restaurant in Pearland (great food) to discuss details of the meet up. She's such a sweetie! Glad she suggested that restaurant, I'll have to bring my Mimi there to eat soon!

On Saturday morning after my workout the troop and I went to Central Market for the cheese festival! We all enjoy cheese so it was a nice outing!

The girls were psyched about the colors so we snapped away!

After the market, I went home for a little nap before Queen Reiko arrived to come assist me with my wardrobe malfunction! I've deemed her "Queen" because she most certainly made a mountain out of a molehill!

She gave me outfit ideas that I never would have conceived on my own! She's thebomb.com and my girls were all over the "dress up!" Thank you Reiko @ Gods Favorite Shoes for coming to my rescue! Be on the lookout for outfits pics every so often..I aim to make her proud!

Last but most certainly not least, Sunday the girls and I attended church services with a cousin. I mentioned at the beginning of the year that one of my goals after relocating was to find a church home. I've visited a few and to be honest I had a great feeling about this particular church from the moment we walked in.

I don't want to announce that I've found my church home without visiting a few more times BUT I have a very promising feeling! I'm excited!! As soon as I'm sure..you'll know!!

Creamy Garlic Grits

Ingredients:

1 cu instant Quaker grits
2 cu water
1 1/2 cu 2% milk
2 Tbsp garlic powder
1 Tbsp crushed garlic (jar or tube)
1 Tbsp salted butter
Salt & Pepper to taste



Garlic grits with shrimp & salmon...repost

Cooking instructions:

I follow the cooking instructions on the grits box to begin. Bring the water and 1 cu of milk (reserve the other 1/2 cu) to a boil. Reduce to a simmer and slowly stir in grits. I constantly stir my grits to prevent sticking.

Once grits are in the pot, add butter, garlic powder, and crushed garlic. Continue to stir, grits should begin to thicken. At this point add in the reserved milk. If you'd like them even creamier, add more milk.

Grits should be soft if they are cooked properly. If they taste grainy, keep stirring and let them cook longer.

I like to pair my garlic grits with fish and shellfish. I'm sure they'd pair well with chicken, or pork too! Or as an option for vegetarians...topped with sautéd veggies.

Veggie Pasta Sauce

After reading the mishap of Mrs. Pancakes spaghetti sauce with broccoli, I decide to post pics of my veggie pasta sauce!

First things first, you want the sauce to be chunky, you're not trying to imitate a smooth tomato sauce. Doing it the "traditional" way won't make sense!






This first photo is the base. Ground turkey, zucchini, cauliflower, roma tomato, onion, bell pepper AND broccoli! If you're going to do it...do it BIG!

I season my sauce according to taste. Typically I'll use garlic powder, onion powder, basil, Italian seasoning, black pepper and salt. It always tastes best if you season the meat while you're browning it.






To my base I add a can of tomato paste and a can of diced tomatoes. I fill the diced tomatoes can twice with water and add it to the skillet. Stir it up and let it simmer! The tomato paste will begin to thicken the sauce.

Choose the veggies you love and get to work! This dish is one of my girl's favorites!

Salad game..recharged!

I had every good intention to eat a salad seven days straight for dinner last week. Last week for me was a total wash! I ate salad three out of the seven days!


Chilled couscous salad with tomato, asian veggie pattie, bell pepper, onion, mushrooms and light soy sauce




Seasoned mango, turkey meatballs, mushrooms, bell peppers, onions, mixed field greens and Newman's Own light cranberry walnut dressing



Honey mustard tilapia, blackberries, sugar snap peas, onion, mixed field greens, dark chili powder and balsamic vinegar

*I've got a confession about salad #3. I didn't love the combo! I don't think the sugar peas paired well with the blackberries. I will try it again without the peas and see how it goes?

An attainable goal for my dinner salads is 2-3 days a week. I will post my creations each time! This helps when I want to go back and recreate a particular salad flavor. Watcha think??

Step your salad game up!

Happy Friday!

Happy Friday!! Payday Friday!!! Time to finish my Christmas shopping!

This morning when I rolled out of bed at 4:15 am *sigh* I was ready to do my Turbo Fire 55 EZ class! My body felt refreshed and energized! I opted not to lift weights or go to Spinning yesterday evening because I felt tired. Typically I can go pretty hard on my workouts throughout the week but even I have days when I need to sit one out.

Once I arrived at work I dropped my stuff in my office and headed over to Blue Water Taco for my “payday breakfast.” I promise you…sometimes this is the highlight of my Friday! I tend to scarf this down so fast I don’t have the chance to take a picture. Today I snapped a shot before the spicy Mexican scramble w/ a side of bacon disappeared! Potatoes, eggs, Pico de Gallo, cheese, jalapenos, cilantro and fresh salsa…mmmm mmmm good!    



My brain is running a mile a minute today…don’t quite know what’s up with that? Anyhoo, I went to preview and pick out my photographs from the boudoir shoot I did last Saturday. Honey let me tell you…my bae is a LUCKY man (he already knows this) as I remind him often! When I saw my “fierceness” flashing across the big screen at the studio, my jaw hit the floor!! The pictures are absolutely beautiful! They turned out even better than I expected! I should have my prints back next week and I’m thinking about posting the one that is most appropriate for mass viewing? I’ve said it before but I am SO GLAD I did this!

Finally Friday!!! Yay!!! I don’t have any major plans this weekend outside of my workouts, starting my holiday cards (I am designing them), and maybe a little shopping. My girls are spending the weekend with their father so this eqauls rest & relaxation for me!

On my menu today:

Breakfast- Spicy Mexican Scramble @ Blue Water Taco (7), Bacon 2 slices (2.5)…I always eat this breakfast on payday Friday!
Lunch- Subway 6” turkey sub w/ veggies & honey mustard (5), Granola Bar (2)
Snack- Pear (1), Almonds 12 (2)
Dinner- Baked eggplant ½ w/ chicken tomato sauce (4)
Snack- Popcorn large bag (3)

Total points allowed: 23
Total points used: 26.5
Activity points: 5
Net: +1.5

H20- 112 ounces
Tea w/ Splenda & lemon- 16 ounces (0)

Workouts:
(AM) Turbo Fire (55 EZ class)

I hope everyone has a great weekend!!! I’m looking forward to lounging in my PJ’s and getting cozy on my couch! Hopefully I’ll score a cute pair of size 10 skinny jeans when I do venture outside the house! Oh yeah and my girls need new coats…where are my priorities???!!! Focused on jeans (wink)! *__*

Veggie Frittata by Miesha Roshawn



Veggie Frittata
Ingredients:
4 – large egg whites
¼ cu – part skim mozzarella
½ cu – spinach (fresh or frozen)
¼ cu – tomatoes chopped
¼ cu – mushrooms chopped
¼ cu – onion chopped
¼ cu – green bell pepper chopped
3 – garlic cloves minced
1 tsp – garlic powder
Cooking spray
½ tsp - yellow curry powder (optional)
Salt & Pepper to taste

Directions: Pre heat oven to 375 degrees. Separate egg whites in a bowl and whip, set aside. Spray a coat of cooking spray in a medium non stick skillet (with an oven safe handle) over medium low to medium heat. Add tomatoes, mushrooms, onion, bell pepper, spinach, garlic powder and garlic to skillet. Sauté veggies until onion are translucent, approximately 5-7 minutes. Add desired salt and pepper at this time. Set temperature to medium low and add egg whites. Be sure to even out the egg and the veggies in the skillet. Sprinkle mozzarella cheese on top. If desired sprinkle yellow curry powder on top at this time. Put entire skillet in the oven on second to lowest rack uncovered for ten minutes. Egg should be set, if not give it a couple more minutes. Remove from oven. Let stand for 3-5 minutes. Gently lift and remove frittata from skillet onto plate…enjoy!

****This is a favorite breakfast meal of mine but it's also great at lunch and dinner****
